A perennial aromatic herb native to eastern and central North America, agastache fennel is a member of the Lamiaceae family (like mint), but its aniseed flavor and aroma are more reminiscent of fennel.
Bees love it just as much in the garden and will flock to visit the spikes of purple lavender flowers that persist from June to September. Hummingbirds and butterflies can sometimes even be seen there. In cooking, it can be used anywhere you might have used tarragon, in herbal tea or to enhance salads.
Agastache seeds benefit from a short cold stratification to increase germination rates.
